  1. 1 young turkey (7.5 kg), melted
  2. 450 g of salted butter at room temperature
  3. Add 1/4 cup virgin olive oil
  4. 1 tablespoon garlic powder
  5. 1 large orange peel, finely grated
  6. 1 small handful of Italian parsley, very finely chopped
  7. 4 sage leaves, cut very finely
  8. 1 medium onion, peeled, cut into four parts
  9. 1 garlic head, cut in half horizontally
  10. 2 bay leaves

  1. Sprinkle sea salt on the turkey the night before. Be sure to apply it to the whole bird, including the inside. Keep the unopened turkey in the refrigerator overnight, then remove it 1 hour before cooking.
  2. In a bowl, combine butter, olive oil, garlic powder, orange peel, Italian parsley, sage and a few pinches of fresh black pepper. If necessary, use your hands to make sure the mixture blends well.
  3. Gently slide your fingers under the skin of the turkey breast. Try to empty the pockets of each half of the breast without tearing the skin. Make a ball the size of a golf ball and keep it in your pocket. Spread oil and massage. Repeat for the other half of the chest. Massage the rest of the bird with the remaining oil.
  4. Preheat oven to 325 F. Fill the bird's cavity with a quarter of an onion, half of garlic and bay leaves and place in the oven. Fry for 3 1/2 to 4 hours. If the skin starts to burn, cover the bird with a piece of aluminum foil. Water the turkey after about 3 hours. Move the turkey as soon as the thermometer reads 165 Fahrenheit in the thickest part of the thigh and chest. Allow at least 1 hour rest before cutting.
