Ingredients and Seasoning for Boneless Stuffed Chicken:

  1. 1 6 or 7 lb broiler chicken
  2. filling
  3. 1 tablespoon butter
  4. 1 large onion, chopped
  5. 2 garlic cloves, finely chopped
  6. 1/2 pound ground beef
  7. 1 lb minced pork (or diced boiled pork)
  8. 2 scrambled eggs
  9. 1 tablespoon Worcestershire sauce
  10. 2 buns soaked in milk, squeezed and cut into small pieces
  11. 1/4 cup chopped parsley
  12. 1 tablespoon chopped sage
  13. 1 teaspoon nutmeg
  14. 1 teaspoon salt
  15. Ground black pepper

  17. 2 tablespoons lemon zest
  18. 2 tablespoons kosher salt
  19. 1 teaspoon ground black pepper

Steps to prepare boneless stuffed chicken

  1. Saute the onion in butter until it begins to caramelize. Add garlic and cook 3 minutes. Pour into a large bowl and let cool.
  2. Add the rest of the ingredients to the bowl and mix well with your hands. Cover with cling film and refrigerate.
  3. Start peeling the chicken pieces without cutting the skin. Starting at the neck, find the collarbones on each side, stick your index finger into both and use it to hold the chicken.
  4. Using a circular knife, begin to separate the flesh/skin from the sternum and spine. Be patient and be careful not to damage the skin, especially on the back where the skin is close to the leg. Dislocation of both wings of the sternum.
  5. Halfway through cooking, turn the chicken over and begin to separate the bottom from the bottom. Relax your pelvic legs.

Remove the aluminum foil and continue frying until the internal temperature reaches 165 degrees Fahrenheit. Leave to rest for 15 minutes.
  13. Remove toothpicks and floss. Cut into slices and serve.
