- Leftover chicken, grilled chicken breast, use leftovers here
- 1 sweet onion chopped
- sliced mushroom
- ~2 liters of stock or chicken broth (I used only 1)
- 1-2 cans full cream coconut milk (I used 1)
- Cabbage (remove and cut the ribs) - I didn't add spinach, but doubled the amount of spinach
- More sun-dried tomatoes and/or can of chopped tomatoes
- minced garlic
- Double all the spices (or to taste)
- 1 can beans (North great)
- chopped asparagus
Dairy-Free Tuscan Chicken Soup Instructions
- Cook chicken in sun-dried tomato oil as directed in recipe. Set aside (cut last and add to soup)
- Fry onions and mushrooms, and at the end add chopped garlic and Italian seasoning.
- Add chicken broth, coconut milk, yeast flakes, pepper, and salt. (You can add chopped asparagus)
- Boil the mixture for 10 minutes.
- Add kale if you plan to cook it (it will take longer than spinach) and cook for about 5 minutes.
- Add spinach, beans, sun-dried tomatoes, and chicken.
- Simmer for 5 minutes, until spinach, kale and asparagus are tender.
- Taste and season
